I didn't measure, sorry (it's a curse!). Just adjust your ingredients to how much you want to make.
2 whole eggs, about 1/2 cup liquid egg whites
pepper to taste
garlic powder to taste
beat eggs and dry spices together
4 slices of Canadian style bacon, minced.
2 handfuls of baby spinach
In an oven proof skillet, saute some minced onions (I used about 4 tbsp) in coconut oil over med. heat, add 1/2 small can of fire roasted chopped green peppers (or pepper of choice, jalapeno would rock). Chop up and add a few strips of roasted red peppers and add to skillet. Add baby spinach and ham. Continue stirring, until baby spinach is fairly wilted. Pour egg mixture over top. Let it set up slightly, stir a few times. Put in over under broiler to cook top of fritatta. I sprinkled a dusting of parmesan cheese over it before broiling.
I didn't add salt anywhere and it was perfect... the ham was just salty enough.
