cucumber salad

I love this salad because it's quick, delicious and easily adaptable.  Use as many cucumbers and tomatoes as you wish. You can use 1 and 1 and have a nice sized salad for one, or go nuts!


Cucumbers, peeled and cut to bite size pieces
tomatoes, same
red onion to taste, finely sliced or minced
seasoned rice vinegar, to coat... you want about 1/2" at the bottom of your bowl/container
lemon pepper to taste

Toss the cucumbers, onion and tomatoes with the vinegar and pepper. Sometimes I only use cucumbers! Best served chilled.  Once plated you can add a bit of crumbled feta.
