I use organic/free range eggs (important for many reasons) and organic veggies whenever possible.
6 large eggs
salt & pepper to taste
multi colored bell pepper slices
1 cup sliced crimini mushrooms
1/2 onion, sliced or chopped
2 handfuls of baby spinach
3 slices chopped turkey bacon (or real bacon already cooked, if you wish)
Put enough oil in a skillet to saute onion and bell peppers until soft.
Whisk eggs in large bowl. Add spinach, bacon, sliced raw mushrooms, and onions/bell peppers. Pour in an oven safe baking dish with room for it to "grow" as it bakes but not so large it's spread to thin. Bake at 375 until it's completely set up. You shouldn't see anything runny when you jiggle it.
Cool, and slice.
