I had a small package of two short rib slabs to try.
I put them in a big zippy bag with:
a few splashes of wine vinegar
a couple tablespoons of olive oil
sprinkled both sides with:
dry mustard
whole black peppercorns
cumin
chili powder
black pepper
dry onion
garlic powder
celery salt
I let this marinade for about an hour, more is definitely ok. Threw on a grill until med. rare... It tastes AMAZING. Very moist and well seasoned, even without soy or Worcestershire.
