I actually tried to measure ingredients (sorta).
1.5 lbs lean ground grass fed beef
1-2 eggs
1/2 cup breadcrumbs (plain), or 1/2 cup almond meal
2 small carrots, finely diced
3 small celery stalks, ribs peeled off, finely diced
1/2 onion, finely diced (everything should be uniform in size)
2 green peppers, seeded/diced
2 cloves fresh garlic, minced
1 tbsp Worcestershire
1 tbsp balsamic vinegar
1/2 tbsp Italian seasoning
1/2 tbsp rubbed sage
1 tsp seasoned salt
1 tsp black pepper (which I forgot, duh)
Put enough olive oil in skillet to saute veggies. Cook until soft, careful not to burn. Burned onions or garlic will ruin a dish. Sprinkle a tiny bit of sea salt on veggies.
Mix ground beef with egg, bread crumbs, and all spices. Once mixed add veggies and mix a little more. Form in to loaf pan. Top with good bbq sauce. Cook at 350 for about an hour.
