turkey taco salad-ish

I say ish, because right now I'm not eating chips or tortillas etc. I just had a bowl and it was good! Would be nice over rice or scooped with blue corn chips.

1/2 onion
1 pkg ground lean turkey
1 can stewed tomatoes (I used tomato sauce because that's what I had)
1 sm can diced green chile
1 can black beans, drained
1/2 jar Piquante (peppadew) sweet peppers, chopped

spices I used: garlic powder, cumin, chili powder and pico de gallo powder.

Saute the chopped onion in a small amount of olive oil. Add turkey, brown. Season while browning...  add all other ingredients. Simmer for a bit. Taste to make sure you have enough seasoning. I added more chili powder and cumin.

Chicken thighs in red curry coconut milk

Just made this.... the idea just popped in my head at work today. I had everything but the lemongrass and thai basil at home :)

6 washed boneless skinless organic chix thighs, patted dry
1 tbps coconut oil (or other oil)
1 can good coconut milk, I used 365 Organics light
prepared red curry paste, to taste. I used about 2 tablespoons
1 stalk lemongrass
thai basil
2 bunches baby bok choy
1/2 yellow onion, sliced

heat skillet with coconut oil. Salt and pepper thighs, and brown on both sides. Remove from pan, set aside. Turn down heat and saute onions. Remove and pile on chicken. Put coconut milk in skillet, add curry paste.. whisk to ensure curry is melted. Add washed/chopped baby bok choy. Give the lemongrass a good whack and add 2" pieces to pan. Let simmer. Add washed/torn basil leaves.  Add back onions and chicken. Turn low and let simmer. I had to add a little sea salt near the end. Make sure you taste as you go!

Serve over jasmine rice or noodles.

turkey chili with roasted peppers

1 package ground turkey (I use Trader Joe's)
1 carton Pomi chopped tomatoes (26oz)
1/2 jar prepared roasted red peppers or similar, chopped up
2 tbsp cumin
2 tbsp chili powder
2 tbsp garlic powder
1 tsp pico de gallo powder (more = hotter)
1 tsp sea salt
few shakes dried oregano

Brown turkey, add tomatoes and peppers. Stir, add all spices. Simmer on low for 15 minutes or so. Taste for salt, add more if needed.

spicy pepper, spinach and ham fritatta

I didn't measure, sorry (it's a curse!). Just adjust your ingredients to how much you want to make.

2 whole eggs, about 1/2 cup liquid egg whites
pepper to taste
garlic powder to taste
beat eggs and dry spices together

4 slices of Canadian style bacon, minced.
2 handfuls of baby spinach

In an oven proof skillet, saute some minced onions (I used about 4 tbsp) in coconut oil over med. heat, add 1/2 small can of fire roasted chopped green peppers (or pepper of choice, jalapeno would rock). Chop up and add a few strips of roasted red peppers and add to skillet. Add baby spinach and ham. Continue stirring, until baby spinach is fairly wilted. Pour egg mixture over top. Let it set up slightly, stir a few times. Put in over under broiler to cook top of fritatta. I sprinkled a dusting of parmesan cheese over it before broiling.

I didn't add salt anywhere and it was perfect... the ham was just salty enough.

the best steak sandwich I've ever made

I had some leftover top sirloin that I cooked in the grill pan last night, and that combined with a good shop at Trader Joe's gave me the brilliant idea... steak sammie.

Re-heat steak (1:30 in micro)
Thinly slice warmed steak
Toast good sliced sourdough bread
Put your favorite condiments on bread (I use mayo and dijon)
lay steak slices on bottom piece. Put a slice of good cheese over steak, melt it on steak/bread 30 sec. in micro
lay slices of heirloom tomato and avocado on melted cheese.
top with baby greens or arugula leaves
smash down top piece of toasted bread, slice sandwich in half. Seriously... good.

corn and avocado salad

Perfect summer salad... Better when refrigerated overnight :)

2-3 ears of cleaned corn, kernels stripped off
1 whole ripe large avocado
1/2 small red onion, diced

1 tbsp seasoned rice vinegar
salt and pepper to taste
cilantro if you're a fan. it's great without.

Stir together, cover and refrigerate

grilled marinaded beef short ribs

I had a small package of two short rib slabs to try.

I put them in a big zippy bag with:

a few splashes of wine vinegar
a couple tablespoons of olive oil
sprinkled both sides with:
dry mustard
whole black peppercorns
cumin
chili powder
black pepper
dry onion
garlic powder
celery salt

I let this marinade for about an hour, more is definitely ok. Threw on a grill until med. rare... It tastes AMAZING. Very moist and well seasoned, even without soy or Worcestershire.

meatloaf with veggies


I actually tried to measure ingredients (sorta).

1.5 lbs lean ground grass fed beef
1-2 eggs
1/2 cup breadcrumbs (plain), or 1/2 cup almond meal
2 small carrots, finely diced
3 small celery stalks, ribs peeled off, finely diced
1/2 onion, finely diced (everything should be uniform in size)
2 green peppers, seeded/diced
2 cloves fresh garlic, minced

1 tbsp Worcestershire
1 tbsp balsamic vinegar
1/2 tbsp Italian seasoning
1/2 tbsp rubbed sage
1 tsp seasoned salt
1 tsp black pepper (which I forgot, duh)

Put enough olive oil in skillet to saute veggies. Cook until soft, careful not to burn. Burned onions or garlic will ruin a dish. Sprinkle a tiny bit of sea salt on veggies.

Mix ground beef with egg, bread crumbs, and all spices. Once mixed add veggies and mix a little more.  Form in to loaf pan. Top with good bbq sauce. Cook at 350 for about an hour.

microwaved corn on the cob, what?!

So, call me late to the party but I just found out you can microwave corn on the cob and bypass all that wait time, water waste... and get instant gratification.

Clean corn
rub ear down with lime
wrap ear in moist paper towel
microwave 90 sec to 2 min per ear

rub with butter and a little pico de gallo spice if you like them spicy.

fritatta with veggies and turkey bacon

I use organic/free range eggs (important for many reasons) and organic veggies whenever possible.

6 large eggs
salt & pepper to taste
multi colored bell pepper slices
1 cup sliced crimini mushrooms
1/2 onion, sliced or chopped
2 handfuls of baby spinach
3 slices chopped turkey bacon (or real bacon already cooked, if you wish)

Put enough oil in a skillet to saute onion and bell peppers until soft.

Whisk eggs in large bowl. Add spinach, bacon, sliced raw mushrooms, and onions/bell peppers. Pour in an oven safe baking dish with room for it to "grow" as it bakes but not so large it's spread to thin.  Bake at 375 until it's completely set up. You shouldn't see anything runny when you jiggle it.

Cool, and slice.

soyrizo (vegetarian chorizo) soft taco

I am a die hard carnivore, but the soyrizo I get from Trader Joe's kicks ass.

1/2 a large yellow onion
whole bell pepper
1 pkg TJ's soyrizo

Heat a little bit of oil in a skillet, saute onions and bell peppers until soft. Add soyrizo and break up in pan with spatula. Stir until mixed and heated.

I simply wrap a few tortillas in moist paper towels and microwave for a few seconds, scoop some of the soyrizo mixture in, top with your favorite topping. Sour cream is perfect! Or, shredded cheese, lettuce and chopped tomatoes.

cucumber salad

I love this salad because it's quick, delicious and easily adaptable.  Use as many cucumbers and tomatoes as you wish. You can use 1 and 1 and have a nice sized salad for one, or go nuts!


Cucumbers, peeled and cut to bite size pieces
tomatoes, same
red onion to taste, finely sliced or minced
seasoned rice vinegar, to coat... you want about 1/2" at the bottom of your bowl/container
lemon pepper to taste

Toss the cucumbers, onion and tomatoes with the vinegar and pepper. Sometimes I only use cucumbers! Best served chilled.  Once plated you can add a bit of crumbled feta.

Quick Penne alla Vodka

1 box of Barilla Penne
1 lb of center cut bacon
1 large clove garlic
1 jar of favorite vodka sauce (Trader Joes is the best I must say)
Heavy Cream
White wine
EVOO
Grated pecorino or parmesan

Add olive oil to saute pan and heat, cut bacon into small pieces ( I use scissors to cut strips) and add into pan. Once bacon is cooked about half way, add 1 clove of garlic chopped. Make sure not to burn bacon, I turn down heat half way through after I add garlic. Once bacon is cooked, drain fat and place back on stove. Add a little white wine to coat bottom, let that sit on simmer. In a separate pan you should have started to heat the jar of vodka sauce and add cream-about 1/2 cup. Boil penne per instructions, then add sauce into pan with bacon, then penne to the same pan and mix together well. Add fresh grated pecorino or parmesan to top it off with ground black pepper. Voila!

The BEST Arugula Salad EVER!

Arugula
Candied Pecans
Proscuitto
Pecorino or Parmesan Cheese
Champagne Dressing (preferably Girards-the Lite version tastes exactly the same too!)
Black Pepper

Add arugula to bowl, candied pecans to your liking ( I found them at the store ready to go with the salad toppings), roll a few pieces of thinly sliced proscuitto up and slice into ribbons, then add to bowl with shaved pecorino or parmesan cheese from block (I use potato peeler), add champagne dressing and ground black pepper and toss. It's really that easy!!

Pork Chops with Herbs and White Wine Sauce

4 Center-cut pork chops
Fresh rosemary, thyme and sage (3 sprigs of thyme, 1 sage, 1 rosemary or to your liking)
EVOO
Salt
Pepper
Olives (anything but black)
Capers
White Wine

Season pork chops with salt and pepper. Chop herbs up and rub on both sides of chops. Heat pan with EVOO and add chops to med-high heat. Cook each side for 5 minutes. Chop up olives and capers together and add to pan, add white wine (enough to coat the bottom) and reduce heat to low. Cover and simmer for 8-10 minutes depending on how large chops are. Plate and serve with reserved sauce in pan. Enjoy!

quick Asian marinated chicken thighs

I just whipped this up last night.

6 bnls/sknls chicken thighs
1/2 cup low sodium soy sauce
1/4 cup seasoned rice vinegar (or tbsp honey)
1/2 tsp ground ginger or fresh if you have it
1/4 tsp dry ground mustard
1/4 tsp black pepper
**Note: all my measurements are approximate. I really don't do much measuring unless I'm baking. Add more or less as you see fit :)

Mix all ingredients in a glass bowl, put chix in... smoosh around so everything is coated. Marinate 10-30 minutes. Heat up grill pan, add a little bit of preferred oil (I use coconut or olive)... sear for a couple of minutes both sides, cover for a few minutes and let finish with heat off. Can sprinkle with toasted sesame seeds and serve with rice and a veggie.
